LEATHERJACKET is a common name for the Irigger-fish of the family balistidae. They include the
Balistes carolinensis of warm Atlantic waters, including the Mediterranean, the
Monacanthus of Australian waters and the
Oligolites saurus. They are used as food in certain sections but are detested by fishermen as clever bait stealers.
The leatherjack fish inhabits shallow waters of the Gulf of Mexico and southern Atlantic coast. Also found in Australian waters, in the Pacific and Indian ocean.
The leatherjacket fish has a mild oily taste similar to spanish mackerel or bluefish.
